Yummy mini pizzas!

So if you're ever in the mood for pizza but don't want to blow your diet, give these a try....you take a whole grain english muffin, slice it in half and toast it. then, spread some light tomatoe sauce on each half and top with low fat shreaded cheese. I guess you could prolly add cut up peppers, onions, mushrooms, olives etc.....but anyways, once you added the topping, throw it back in either a toaster over or the regular over and heat it to melt the cheese. You could prolly pop them in the microwave, but that might make them on the squishy side. I'm making thse for dinner tonight so ill let you know how they turn out :)

    i made these last night and they were wonderful. the best part is...if you use a whole grain english uffin and fat free motzerella cheese, 2 pizzas (1 english muffin) only adds up to about 250 calories! It oes great with a nice salad! I have one englsih muffin left tat i'm trying to use up and i found another recipe for garlic mini pizas! You do the same thing, ut instead of tomato sauce and cheese, you toast the muffin, then add spray butter, garlic powder, fat free motzerella cheese and then some pareasen cheese on top and bake for about 5 minutes or so. I'm really excited! It makes you think you're indulging in something really bad, but it's actually good for you!!

    I'm going to try this. I like using tortilla's with meat sauce & 1/4 c monzerella cheese & 6 pepperoni's. I cook it in a toaster oven until cheese melts. very delicious, healthy & satisfying.

    So good! After reading this the other night, I went out and bought the ingredients and made them for my boyfriend and I. He is not much for healthy eating but he loved them too. So good! thanks for the recipe!
